Can I use a different Port?
I know Ultra VNC uses port 5900 by default, but can another port be used? Does it really matter?

Yes, you can use any port you want.
It matters only in that port 5900, being "well known" for VNC, is often the subject of random drive-by port scans, so using alternative ports is a bit safer.
