Have I missed something in setup?

We have been using Ultra VNC for years on various PCs without problems. I'll start off by stating I'm not very techy so please bear this in mind with any help you can offer; replies in dummies terms please! I haven't needed to use VNC settings as the default ones have always worked fine, so am not familiar with them.
Our previous set up was PC 1 & 2 on XP, PC 3 was Windows 7, where PC 1 is the VNC server. We use a word doc on PC 1 to log jobs coming into the office, and using VNC we can all access the document as calls come in. This worked fine.
Problem arose when we upgraded PC 1 & 2 to windows 7. PC 3 has no problems. When PC 2 is viewing PC 1, input into the word doc is slow with a definite lag, and PC 1 has a number of glitches, eg can't highlight text in word & can't click on certain "ok" buttons in other software.
All connnected on a LAN network.
Is this a glitch we have to live with, or is there a change in settings I can try?
