Just wondering if theres any way to chat to the remote PC without the need for seeing their screen etc..

I second the request. Ultr@VNC has some interesting features, but you have to connect to the server's desktop before you can use them. That is you can't chat, transfer files,... without taking control of the server's desktop.
It would be so much more handy to have a start-window in VNC where one can choose the sort of connection one wishes to make.
If I just want to ask a few questions, I would just want to start a chat session. To pull or push some files I just want to initiate file transfer. etc...
I have seen others do that, so it should be possible for Ultr@VNC too.

YES YES YES! This is a much-desirable feature. If you've got UltraVNC on everyone's machines, and it's got a chat feature, it's duplicating things to go round everyone and add a second chat program too when what's needed is to be able to have no screen viewing :)
Perhaps what's needed is a menu pad that you can launch (rather than a screen view) that basically says Chat, File Transfer, Screen, Reboot etc.

And a yes to adding a screen name :) not everyone recognises your computer name :)
