Sure they can -- they know when their network is in use, they know you have a connection, they know exactly what remote IP addresses you're communicating with, they know your machine's MAC address, they know their own wireless key (if any) you're using, they can inspect the packets you're sending and <b>probably</b> infer that they are encrypted. (If you're using the SecureVNC plugin it's unlikely they'd be able to decrypt much at all though, except for initial passwords.)

Not unless you're running an insecure OS or application with ports open that would allow it. You're a machine on THEIR network, but your PC's security is up to you. The fact that you're making an outbound VNC connection has nothing to do with it.
