Connecting to ONLY a specific monitor in a multi-monitor setup

I'm looking to implement a setup where I can have multiple monitors on one computer and have a remote VNC connection to each of the monitors separately. Of course, I can use the "Switch monitor" button but I am trying to automate so would like to avoid that.

Based on what I have found online I tried connecting from vncviewer with hostname:displaynumber or hostname:5900 for display 1, hostname:5901 for display 2 etc, none of this worked.

Is there any way to specify in the server settings that ONLY a certain monitor should be broadcast? If that were possible maybe I could open multiple instances of the server and use a different port for each monitor but I can't seem to find any way to do that.

I have messed around with the steps shown here but I don't think it will work for my application.
